Crispy chicken

 As promised, I'm sharing this family favourite. It has all the crunch and flavour of fried chicken, without the frying!

This recipe, as well as being healthy, is also an incredibly simple recipe. There is very little prep, and then it goes into the oven where you can forget about it.

Ingredients

  • 1 cup wholemeal flour (or arrowroot flour for a gluten free/low FODMAP version)
  • 1 tbsp tumeric powder
  • 1/2 tablespoon paprika
  • 1 tsp salt
  • 1 tbsp garlic powder
  • olive oil (spray preferably)
  • 1 whole chicken cut into pieces (or if you are a legs and thighs family you can just use the equivalent amounts of those or any other cut)

Directions

Preheat your oven to 180ºC, and line a baking dish with baking paper. Mix together all of the ingredients in another dish, then toss through the chicken until coated in the flour and spice mixture. Place into baking dish and drizzle or spray with some olive oil. Cook for approximately 1.5 hours or until crispy.

You will never buy crispy fried chicken again!
