Mandarin pudding

This healthy gut boosting dessert is simple to make and great for those evenings when you know you feel like a little something sweet but don't want to reach for the 'hardcore dessert' options.


  • 1 tbsp chia seeds
  • 1 mandarin, diced
  • 1/2 cup plain kefir


To be honest, I think the reason this tastes so good is because I make my own kefir. I really dislike the store bought varieties - I think they taste and smell a bit wierd. Making your own kefir is a really easy task - it takes all of about 60 seconds of prep time and then you walk away and come back to a wonderful probiotic drink 24 hours later. However, if you do enjoy the store bought variety, choose a plain kefir as opposed to a sweetened or flavoured one.

Stir together all of the ingredients and leave to set in the fridge for at least 15 minutes. Serve chilled.
