Breakfast oat cake

I'll admit, even I was a bit concerned when I came up with this recipe idea, and first time around it was a bit of an abomination. But I've perfected it now and my family have not only stopped laughing at me, but they are all eating it now too.

The idea for this recipe came from a need to get a bit more protein into my diet because I was training hard and I could just feel tat there were days when I needed to get a bit more protein into my breakfast without having to crack out pots and pans, while still eating something I enjoyed. With the weather cooling down, I'm all about my morning oats and I am a creature of habit so this idea was born...

Ingredients

  • 1/3 cup rolled oats
  • 1/3 cup milk
  • 1 large egg
  • topping of choice

Directions

I like to soak my oats in the milk the night before. I prefer the taste and texture. Also I don't think this will work if you don't because the mixture will be too wet. So before you go to bed, put your milk and oats into a bowl. In the morning, crack 1 egg into the bowl, stir and microwave for 65 seconds. Stir again and microwave for another 65 seconds. It's as simple as that. Your oats will become cakey and warm.

I like to top mine with a sprinkle of cinnamon and some honey. But you can add anything really - fruit, nuts, all of the above.
